Eating well for eczema | Crispy Salmon Bites

Crispy Salmon Bites on bed of brightly coloured mixed salad. Recipe from the eating well for eczema collection.
We’ve used chickpea flour to coat these little salmon bites which gives them a lovely crisp outside. You can buy chickpea flour readymade or it’s very easy to make in a liquidizer. The salmon is deliciously succulent cooked this way and has a lovely delicate flavour. Your little ones will have lots of fun dipping the small cubes of fish in the flour and milk and why not let them help with preparing the salad to serve with these tasty bites?

Salmon is a good source of omega-3 which is an important nutrient to incorporate in the diet of eczema sufferers as it helps to reduce inflammation. You can read more about the benefits of Omega-3 here.

Ingredients

  • 250g organic dried chickpeas
  • 5tbsp organic oat milk
  • 3-4 fillets fresh salmon, skin removed
  • Vegetable oil for shallow frying

Serves 4

Salmon is a great source of omega 3, which new research suggests can alleviate eczema symptoms by improving the skin barrier function.

Method

  1. Place the chickpeas in a liquidiser and whizz until they become a fine flour. This may take up to 5 minutes. Sieve the flour and discard the larger lumps that remain in the sieve.
  2. Put the flour and the oat milk into 2 separate small bowls.
  3. Cut the salmon into small even-sized chunks.
  4. Toss each piece of salmon in the flour making sure it is well coated. Briefly dip each piece into the oat milk and toss again in the flour for a second coating.
  5. Heat the oil in a frying pan until a small cube of bread turns golden in a few seconds. Add a few pieces of the fish at a time and turn to ensure even cooking. Test the fish to make sure it is cooked through. Depending on the size of the fish pieces, this should only take a minute or so.
  6. Leave to cool slightly and serve with a salad of lettuce, cucumber, sugar snaps, cherry tomatoes, baby corn and Romano peppers.

These crispy salmon bites are delicious served with a sweet chilli sauce dip for those who are not eczema sufferers.
