Dairy-free Yorkshire puddings (that actually rise!)

Soya milk has a nasty habit of making Yorkshire pudding batters too heavy to rise – but this foolproof recipe, which changes the traditional proportions of milk and eggs, works like a dream.

Ingredients

• 80g plain flour
• 1 medium ei
• 125 ml ongezoete sojamelk
• Salt & pepper to season
• Oil/fat to cook

Methode

1. Preheat the oven to 220ºC/425ºF/Gas Mark 7. This step is really important, don’t be tempted to put the use the oven before it reaches the right temperature.
2. Zodra het op temperatuur is verwarm je de olie in je puddingschaal voor ongeveer 5 minuten.
3. Terwijl het opwarmt, doe je alle ingrediënten in een kom en klop je ze samen tot een vrij dik beslag.
4. Giet het beslag in de hete olie en zet de schaal 15-20 minuten terug in de oven tot de puddinkjes gerezen en krokant zijn.

Aangezien zelfs ongezoete soja vrij zoet is, voegt de kruiding echt iets toe aan dit recept.
